savory summery meals

Well, no word on little Baby Shank yet!  Mom reported this morning that Nora is resting and had some slight contractions yesterday, but other than that, not much activity.  I wish I was there to witness all the excitement!  If you two are reading this, I miss you both VERY much, and can’t wait to get out there next Monday!

Meanwhile, back here in G’burg, we celebrated Peter’s 25th birthday on Saturday night, and then Father’s Day on Sunday after church.  I had a lot of fun cooking some special meals for them…

Peter’s B’day dinner:

Morrocan Roasted Chicken with a Bulgar-Wheat, Eggplant, Cherries, and Parsley Side Salad, and Greek Dill Yogurt Dip with Fresh Cucumbers. (Recipe from “Clean Eating” Magazine, SUMMER 2008).

Dad’s Father’s Day Meal:

Seared Tuna Steaks with a Wasabi-Ginger glaze, served with a Spinach-Orange Salad and Roasted Potatoes and Onions.  (Tuna recipe from “Cooking Light,” JUNE).

Mom, per your advice, I bought Dad his favorite cookie from Whole Foods Grocery Store: the ‘Everything’ cookie as well as a peanut butter cookie.  It was the perfect ending to the meal—seriously, the boys were ooooing and ahhhing them as I brought them to the table…it’s amazing to think that a store-bought cookie made them so content, and I didn’t have to lift a finger to make anything from scratch! 🙂

Then, the 3 of them went off to play 18 holes at Laytonsville with the gift certificates that Nora and I bought for the boys for their b’day presents, and I breathed a sigh of relief when the house suddenly got completely QUIET :)  Of course, then I got bored and went out to play volleyball for 3 hours with friends at a nearby park!

Other interesting recipes I tried this past week:

A Lima-Bean and Parsley Dip made to be like Hummus….it tasted really good with fresh veggies! (Also from Cooking Light, JUNE)

Salmon, Roasted Asparagus, and Caprese-Tomato Salad……..yummm…..
