DOMESTIC LAND

Well, Mom was off to Phoenix this morning for a TBD amount of time 🙂 Baby Shank is heading up the schedule, for sure! Meanwhile, I will hold down the fort here at home. I have to say, I am excited to practice my domestic skills over the next two weeks. Cooking, Cleaning, Laundry, Errands, Grocery-shopping, the whole shebang–it’s all pretty fun.  Especially the cooking part. Tonight, I eased into this role the cheating way: by ‘preparing’ Leftovers for dinner. Yesss :)   I served Grilled Chicken, Mushroom Risotto, an Orange-Rhubarb-Onion Ragout (pronounced “raaa-goo”), and Chopped Watercress Salad. However, I DO have some grandious plans for meals over the next two weeks, such as Tuna Steaks with Mango-Tomato Salsa for Dad’s Father’s Day meal and Peter’s 25th birthday. And, I would like to try my hand at some homemade wheat rolls, as well as Fish Taco’s, a Wheat-Berry salad of sorts to pair with Turkey Cutlets, and perhaps a special chocolate dessert. (don’t worry…I don’t pair to serve these things all together… 🙂 ) Pictures from Emily’s kitchen to come on that front!

And, honestly, I am SOOO grateful that the power-outage we had last week is not happening THIS week. Today was Code Red at 98 degrees for heat/humidity, and if we didn’t have AC and the Fridge working, I think I would just about die. This huge storm came through last Wednesday, and knocked out power lines, multiple lights at intersections, and electricity for 80,000 homes. We went without power for a day and a half…below is a picture of the night sky after the rain/lightening/winds subsided. It was pretty awesome to see…definitely made me admire God’s power displayed in creation!
