i have been in the muffin mood these past few weeks. Â last week, i made pumpkin-rum-currant muffins, which were very yummy…and tonight, i noticed that the fresh ricotta cheese was about to go bad, so i whipped it out of the fridge, and found a quick online recipe for lemon-ricotta muffins…the recipe was incredibly simple, and the muffins had that perfect balance of outer crunch and inner moistness (so long as you didn’t mix the dough too much…) Â January seems to be a great time for comfort food, and muffins have that way of being delicious any time of the day, don’t you think?
