So, we had a fun time with the “Jansen” relatives this weekend. My cousin Matt Jansen got married yesterday, so Uncle Bruce and Aunt Barb flew in from CO for the special day. It was great to catch up with everyone!
Then, today, we celebrated Mother’s Day with Mom and Aunt Barb! I made a special lunch for them after church:
Grilled Salmon, Corn on the Cob (Mom’s fav), Romaine Salad with Sliced Cucumbers, Strawberries, and Sweet Toasted Almonds with a Lemon-Poppyseed Dressing, and Roasted Beets. For dessert: homemade Raspberry Sorbet! It was SO easy to make and really yummy.
A little note in honor of my Mom. My mom is an incredible person. She is one of my best friends. Every day, she makes me feel happier and more alive, because she truly cares for me and always makes me aware of how great God’s love for me is. Mom knows when to say something, and when to just give you a hug. Mom serves our family constantly–through her prayers, cooking, cleaning, errands, general communication, and gracious encouragement/exhortations. It’s weird to think that she is about to be a Grandmother, because she is just SO young. She looks young, her spirit is young, and she is FULL of life. I love my Mom because she has taught me more about the Lord and faith and my Christian walk than any other person I know. And the best part is, that she LIVES out what she preaches. So, I always know that Mom is genuinely living by her convictions, and wisely can advise me to do the same, because she has personally experienced the blessing of walking according to the word of God. Mom may not know how to communicate with text-messaging very well (hehe), but she knows how to communicate love and compassion to all around her through her smiles, words, laughs, hugs, written notes, and joy. I love you Mom!
