A friend recently requested this recipe from me. It brings back many childhood memories, but in particular, it reminded me of coming home in the early morning from swim practice up at JFD (Joe Flaherty Dolphins) and walking into the kitchen to the rich aroma of Overnight French Toast. Â When Brett was a toddler, Mom and Dad used to send Nora, Peter, and me to swim practice 2 days a week from 5:30-7:30am for our exercise before home-schooling for the day. Â Dad would drive us there on his way to early AM b’ball before he continued on to work; Nora, Peter, and I were like zombies on the way….staring out the windows, watching the trees whiz by in the cool, morning darkness…sometimes, keeping an eye out for deer. Â Then, as soon as we strolled in the door at 8am with Mom, smelling of chlorine, baby powder that we shook into our swim caps, and NAPCA moisturizer spray, a more alluring aroma trumped our own: the crusty, vanilla french toast fresh from the oven! Â How we scarfed down those pieces of toast! Â Needless to say, this recipe is easy to prep, easy to assemble, and easy to serve. Â Even though it’s March, I dare say we’ll get one more cold morning on which this will taste really really delicious.
