muffins

i have been in the muffin mood these past few weeks.  last week, i made pumpkin-rum-currant muffins, which were very yummy…and tonight, i noticed that the fresh ricotta cheese was about to go bad, so i whipped it out of the fridge, and found a quick online recipe for lemon-ricotta muffins…the recipe was incredibly simple, and the muffins had that perfect balance of outer crunch and inner moistness (so long as you didn’t mix the dough too much…)  January seems to be a great time for comfort food, and muffins have that way of being delicious any time of the day, don’t you think?
